- It consists of two main chambers.
- The first chamber on top is the Nougat Cooking Chamber (Seidomat) and the cooking chamber cooks the product with steam. It operates at atmospheric pressure and under vacuum. Its high volume allows the product to be foamed without the risk of being sucked by the vacuum pump. There are product sight glasses and pressure indicators on the Nougat Cooking Boiler. The steam is automatically passed through coils in the tank, brought to the desired temperature and vacuumed. The cooked product is transferred to the turbo mixer underneath via an actuator valve. Product inlet and outlet, chimney, steam inlet and air inlets are made with actuator valves.
- It transfers the egg solution, which is transferred from the egg resting tank to the chamber next to the turbo-mixer, to the turbo mixer with an actuator valve. The cooked nougat product and the egg solution are mixed in the turbo-mixer quickly and at high speed to bring the nougat dough to the desired consistency.
- Adjustments and controls are made with the PLC screen on it. The system works completely automatically.
